It’s Easter Monday, and if you’re anything like us, you’re wearing your stretchy pants and rocking a substantial chocolate/Peep hangover.

So, now what?

As we see it, you’ve got three options:

  1. Admit defeat, and just give in. Keep your candy binge going. Stock up on sweatpants and insulin.

  2. Eat ham sandwiches and chocolate bunnies until you get bored, and throw out whatever you don’t get to.

  3. Figure out how to recreate some inspired dishes using your Easter leftovers.

We’re here to help.

Easter Candy Blondies

The Easter Candy Blondies from Home Made Interest are the perfect use of those love-to-hate-em Peeps. They are a delicious blondie brownie topped with Peeps and baked until they are melty and delicious.

Easter Brunch Biscuit Sandwich

Epicurious

Epicurious

Easter brunch can make way for a regular ham sandwich -- not terrible, by any stretch -- but Epicurious takes it to another level, adding mashed deviled eggs, pickles and a big, fluffy biscuit.

These are leftovers, elevated.

Croque Monsieur/Madame sandwich

If you say there is a better ham sandwich than a croque madame, it means one of two things: 1) You’re wrong. 2) You’ve never had one.

This perfectly artery-clogging sammy is toasted bread, topped with sliced ham, gooey cheese and an incredible cheesy sauce called mornay on top. That’s the Monsieur. Add a fried egg on top (no, just do it), and you’ve got yourself a Madame. Oh my.

Easter S’mores Dip

Peeps are the candy people really love to hate. Honestly, it’s just marshmallows and colored sugar -- and there’s one marshmallow favorite that no one can deny: S’mores.

This inventive recipe takes 10 minutes, combines milk chocolate with white chocolate and tops it with our gooey pastel friends. Voila! Peeps S’mores, perfect for graham cracker dipping.

Leftover Ham and Pineapple Kabobs

This leftover transformation is nothing short of genius.

Goodness Gracious has some specific recommendations if you are using fresh pineapple vs. canned, but this kabob recipe combines your leftover ham, some juicy pineapple chunks and a light glaze for a perfect leftover meal.

Ham and Macaroni Casserole

Have you ever seen one of those recipes floating around Pinterest and just knew it would be a winner for your family?

This is that recipe

Leftover ham meets perfectly cooked mac and cheese. It comes together easily and quickly and, with maybe a quick side of broccoli, could pass for a complete meal.

Tuesday’s dinner is done.

Whoppers Robins Egg Milkshake

Deceptively simple, this milkshake simply blends the weird malted milk ball candy with your favorite ice cream and turns it into a whole new thing.

Does it save on calories? Absolutely not.

Does it give you something to do with these strange little eggs? Sure does.

Deviled Egg Salad

Deviled eggs don’t last long around our family gatherings. They are the one food that starts to disappear as soon as they are set out, and most of us are so full of eggs that by the time the rest of the food comes out, we could probably pass on the meal.

That makes us the perfect family for this recipe, which uses up your extra hard-boiled (but refrigerated) Easter eggs. Did a little of the dye seem through and color the egg whites blue? No biggie.

Candylicious Junkyard Cookies

These cookies are a staple at our house after any major holiday. They take all the leftover candy -- Cadbury Mini eggs, chopped mini Snickers bars, you name it -- and turns it into the most delicious cookies ever. Pro tip: Got some potato chips or a handful of pretzels stashed somewhere? Throw those in as well. This is the perfect recipe for cleaning out your pantry.
