Love Bites: The Baby Boomer Treat

Love is in the air, and at The Kokomo Post, we’re all about spreading the sweetness this Valentine’s Day. With the release of our new series, “Love Bites,” we’re here to make your celebrations spectacular. In our latest episode, we joined forces with Jimmy Jones, owner and chef at Mama Karen’s, as he shared a nostalgic, simple and delicious sweet treat that’s sure to steal hearts.

Jimmy takes us on a journey down memory lane with his creation—a treat that has become a favorite amongst the older generation. Aptly named Baby Boomers, Jimmy says this treat pays homage to the loyal customers who have requested it time and time again. But don’t be fooled by its vintage charm—this treat is guaranteed to delight both the young and the young at heart.

Our adventure begins with the assembly of tiny peanut butter sandwiches using none other than Ritz crackers. Jimmy and our host, Bree, craft these miniature delights, spreading a dollop of creamy peanut butter between two crackers to create the perfect bite-sized treat.

But the magic truly happens when these peanut butter cracker sandwiches take a dip in melted chocolate. With a quick dunk and a gentle tap to remove any excess chocolate, our creations are placed delicately on parchment paper to set.

Once the treats have cooled and dried, it’s time to add a touch of flair. Jimmy demonstrates a simple yet effective technique—using melted chocolate in a ziplock bag with a tiny hole snipped in the corner, we drizzle our sandwiches with decorative patterns, adding a sweet touch that elevates our creation.
